1 lb. ground venison
1 lb. cubed venison
1 can black beans
1 can hot chili beans
2 cans chili spiced diced tomatoes
1 1/2 cups vegetable juice
1 cup water
1 large white onion, diced
1 yellow pepper, diced
1 orange pepper, diced
1 (15 oz.) can pumpkin
1 T. chili powder
3 T. garlic powder
2 T. seasoned salt
1 T. ground cumin
1 tsp. cayenne pepper (optional)
Brown ground venison and venison chunks over medium heat. Season with chili powder, garlic powder, seasoned salt, ground cumin, and cayenne pepper. Combine browned venison and all other ingredients into a large slow cooker. Stir ingredients together, making sure pumpkin gets mixed in. Cook on high for 3-4 hours or on low for 5-6 hours. At the end, you can remove the lid for the last half hour to hour to allow chili to thicken. Serve with shredded cheddar and sour cream.
Tip: This dish pairs well with medium-bodied red wine or a Michigan IPA.
